ABOUT FIRE RAMEN
Menbaka (Crazy about noodles) Fire Ramen was opened in Kyoto in 1984 by ramen Master Masamichi Miyazawa, who spent his youth learning the intricacies of ramen making in kitchen across Japan. Master Masa-san wanted to create a different ramen from the various ramen restaurants offered in Japan. He later introduced Menbaka’s signature “Fire Ramen” to the menu creating the one and only fiery umami flavour (Wok-Hei: Charred flavour). Becoming the first-ever ramen-ya in the world to do so. The Singapore outpost of Menbaka Fire Ramen, opened in November 2020 at Cineleisure Orchard, marks the brand’s first and only international outlet.
Menbaka Fire Ramen is widely beloved in it’s native Kyoto, and is famous for both it’s theatrical serving methods – where chefs ignite the oil to create tall, dramatic flames, and pour it over their signature broth covered with Negi (green onions), for a rich imitable unique taste – as well as creating long snaking queues.
Today, Menbaka Fire Ramen is helmed by master, Masamichi Miyazawa and son, Shin Miyazawa. Together they bring a youthful energy and fiery passion to the family business.
The original Shoyu Ramen comes with a 226 year old secret recipe freshly concocted near Kyoto. Blended with our chicken broth and flaming Negi juice, a unique umami flavour is created for every Menbaka’s Ramen fan.
